Various kinds of pastries, called “börek”, constitute an important part in Turkish cookery. Different sorts of dough can be prepared at home, but is also a greaty facility to buy ready made thin sheets of dough (pilo dough), called “yufka”. The “börek” can be prepared with a different kinds of fillings and can be baked or fried.
You can add eggs, milk, olive oil, vinegar, yoghurt or butter, to create different kinds of pastries. Knead it with fillings of minced meat, white cheese, spinach, poultry, fish and other vegetables which is then borek.
Boreks are classified according to cooking-folding method, type of dough and filling. Potato arm borek is folded in a shape of long cylinder and placed in tray a little twisted and baked; cigarette borek is in shape of a cigarette and fried; zucchini borek is made by placing whole yufkas onto tray, spreading grated zucchini in between and baking.
In most bakeries You can buy pastries and cakes. Those with low income, like working women and students regularly purchase these products.
